Hot Joy: Fried Rice, Hot Joy-Style

I think what makes fried rice really awesome is
just because it's a big bowl of starch, I don't know.
(upbeat rock music)

Mainly what Hot Joy is about and where it came from
is me cooking for myself at my house.
I'm Quealy Watson, and I'm the chef
at Hot Joy in San Antonio.
We'll research really authentic dishes,
make them as best we can as close to the original dish and
then say this is really great,
but how are we gonna mess it up?
I would rather have people walk away
from Hot Joy and call the food kinda trashy
than what I get a lot which is stoner food.
Stoner food, I think, implies that it,
not a lotta thought went into it,
and you're just, like, slicing hot dogs
into a bowl of ramen or something.
We put a lotta effort into making trashy food. (laughs)
Migas is a Mexican dish that they serve
all over San Antonio.
Essentially scrambled eggs, pico de gallo or red salsa,
tortilla chips at the end and cheddar cheese.
The idea behind this is to take a classic Mexican dish and
turn it into a fried rice,
so this is what we're gonna be using.
Eggs that we're gonna scramble.
We also have cilantro, jalapeno,
just regular yellow cheddar, diced onion,
green onion that's been thinly sliced, tomatillo jaew.
It's a mix between a Thai sauce and
a Mexican red chile sauce.
Then we have rice.
This rice has been cooked a day ahead.
Valentina's hot sauce, what I grew up eating.
It's what my grandfather used.
Then lastly corn tortillas.
We'll start by frying these
then we'll put them in at the end.
We use rice brand oil.
You can use whatever you're comfortable with
as long as it has a high smoke point.
We get the oil hot, throw in
(pan sizzling)
your jalapeno and onion,
(pan sizzling)
our scrambled eggs, and then we throw in the rice
that's cooked ahead a time.
Then once it gets nice and hot we put in the jaew.
What you're looking for is a really hot pan,
so that the moisture immediately evaporates.
Then at the end, we throw in our cheddar,
the chips that we made earlier.
Then you just get the cheese to slightly melted.
Just enough time to get it a little hot,
throw in the cilantro and some green onions.
You don't wanna cook the rice too long.
Then at the end, we throw on some hot sauce
and some more fresh herbs to go on top.
That's how you make Hot Joy's Migas fried rice.

It's like pretty awesome when you're hung over (laughs)
or any time pretty much.
This is Hot Joy food, so there's nothing standard about it.
