GO HERE: to experience the new generation of pastry celebrity. (Pierre Hermé, we’ll always love you!) Gaudard’s beautiful patisserie looks 19th century, as if Astier de Villatte designed Ladurée. Some of the recipes are from the 19th century, too—albeit with a lighter touch.

ORDER THE: lemon meringue tart, vanilla éclair, mille-feuille, Paris-Brest.

THE VIBE IS: infinitely Instagrammable, from the tiles to the tartes.

PRACTICAL STUFF: Closed Monday. Open other days from 10 a.m. to 8 p.m. Also check out his Salon de Thé near the Tuileries.
