A spritz typically features a bitter liqueur mixed with sparkling wine and/or fizzy water or soda. In this nonalcoholic one, adapted from a recipe from nonalcoholic spirit company Wilderton out of Hood River, Oregon, the saltiness and complexity of the olive brine adds depth, while the garnishes contribute visual and aromatic interest. Chill—but don’t freeze—your aperitivo and tonic to keep the ice from diluting too quickly.

Ingredients

oz. chilled nonalcoholic citrus aperitivo (such as Wilderton)

oz. fresh lemon juice

½

oz. olive brine

oz. chilled tonic water

Olives, thyme sprig, and lemon twist (for serving; optional)

Preparation

  1. Combine 1½ oz. chilled nonalcoholic citrus aperitivo, ¾ oz. fresh lemon juice, and ½ oz. olive brine in a collins glass. Fill with ice, top with 3 oz. chilled tonic water, and stir twice. Garnish with olives, thyme sprig, and lemon twist if desired.
