
Douglas Ankrah concocted the original Pornstar Martini cocktail in London back in the early aughts. It’s a modern classic—vanilla vodka, passion fruit liqueur, passion fruit purée, and vanilla sugar, plus a sidecar of sparkling wine—but can be tricky to find at bars in the US. All the more reason to try it at home.
To make passion fruit purée, you have a couple options: The easiest is to buy it. Funkin is a reliable brand. So is this frozen version from Pitaya Foods; just let thaw until liquid-y. Or, if you can get fresh passion fruit, make your own by straining out the seeds and blending. Because many American grocery stories don’t carry vanilla sugar, the simplest solution is a little granulated sugar with a drip of vanilla extract, as we do below.

Preparation
Combine 1½ oz. passion fruit purée, 1½ oz. vanilla vodka, ½ oz. Passoã (passion fruit liqueur), ¼ oz. fresh lime juice, 1 tsp. sugar, and ¹⁄₈ tsp. vanilla extract in a cocktail shaker. Add ice; cover and shake until outside of shaker is frosty, about 15 seconds. Strain into a martini or coupe glass. Serve with a shot (1½ oz.) of sparkling wine (such as cava or prosecco), which you can drink side by side or pour into the cocktail.
