Ramp season causes somewhat of a hysteria among farmers' market-goers in the spring. The elusive wild onions are only around for a short window of time--from late March until June--and people really do get all if-you-take-that-last-bunch-I-will-challenge-you-to-an-Alexander-Hamilton-style-duel over them.

Rightly so. They're freaking delicious. So try incorporating them into brunch with these biscuits. And for a great breakfast sammie, split a biscuit and fill it with sliced ham or smoked salmon.
