Marmalade

Marmalade is a type of preserve that contains both the flesh and the peel of the fruit. The peel's bitterness provides a nice contrast to the sweetness of the jelled base. Typically made from citrus, marmalade gets its name from the Portuguese word marmelada, which translates to "quince jam."
