HOW TO BUY:
Look for mangoes that have peachy, piney aromas at the stem end. A ripe mango should yield slightly when you press the "shoulders" of the fruit, near the stem.
HOW TO USE:
To dice a mango, position it on its narrowest edge and lop off both sides (start each cut about a half-inch to the side of the stem to avoid the pit). With a sharp paring knife, cut a crosshatch on the flesh side of each half. Push on the peel side to make the cubes pop up, and then shave them off at the base.
