Our Test Kitchen recommends using wild salmon for its superior texture, flavor--and because it's a more sustainable choice. But there's a catch: The wild stuff isn't always available. Having farmed salmon on menus and in stores year round has made it easy to forget that salmon is a seasonal fish. In fact, until 20 years ago, the only way you ate salmon out of seasonwas in cans or frozen.
