Homemade Marinated Olives

I'm Hunter Lewis, we're in the BA kitchen,
and I'm gonna show you how to marinade olives.
The first step is to infuse olive oil.
Get some extra virgin, chili, three cloves of garlic,
a couple bay leaves, and cracked coriander.
You can do it in a skillet or you can do it in a saucepan.
But the key is to go very slow.
I'm gonna pull this off heat
and let it steep for about an hour.
We're working with a different mixture
of brined olives, use whatever you like.
I've got Castelvetrano, nicoise, and Kalamata,
and these are mixed with thinly sliced oranges.
I'm gonna take my infused oil and pour this over,
then I'm gonna mix this together and let it sit
at room temp for a couple hours, it's that easy.
