The Secret to Deviled Eggs

I'm Hunter Lewis, we're in the BA kitchen,
and today we're making deviled eggs.
All right, so we got our eggs prepped,
it's time to make the filling.
Two keys to any good filling, mayo and mustard.
This recipe hails from North Carolina,
so we're using Duke's Mayonnaise.
Throw in my egg yolks,
add a little mustard, chopped scallion.
Secret weapon, bacon fat.
Little salt, black pepper.
You wanna mash this until it's really smooth.
All right, so now we're ready to pipe these.
I'm gonna transfer the mixture to a piping bag.
It's gonna go in the fridge for a few minutes to chill.
You can do this with a fancy star tip, or a fluted tip,
but we're gonna keep these plain.
Everybody needs a good deviled eggs recipe
in their back pocket.
Ours has bacon and scallions.
