I’ll take an extra half hour of sleep over breakfast any day. But just because I skip the a.m. eggs doesn’t mean I go without—I just flip the script and make them for dinner. I’ll add chickpeas to a frittata or stuff a wrap with hard-boiled egg slices, sausage, pickles, and herbs. Each of these recipes takes under 45 minutes, has 10 ingredients or fewer (not including salt, pepper, and extra-virgin olive oil), and requires no special gadgets or appliances.
