Ingredients: 18 cups 1/2-inch cubes sourdough bread (about 2 1/2 pounds); 1 tablespoon olive oil; 2 pounds fresh chicken-apple sausage, casing removed; 1/4 cup (1/2 stick) butter; 3 cups chopped onions; 3 cups chopped fresh fennel bulbs; 1 cup chopped celery; 2 teaspoons chopped fresh sage; 2 teaspoons chopped fresh thyme; 2 teaspoons fennel seeds; 1 teaspoon salt; 1/2 teaspoon ground black pepper; 1 cup (or more) low-salt chicken broth; 2 large eggs
