For no-cook, fresh, appetizer options, you've got fruit (duh), salad (uh huh), fruit salad (but who does that?), and then our favorite, a salad that also has fruit. Most of the time, fruit-in-salad means some thinly sliced apples (plus walnuts, plus blue cheese, if you're doing paint-by-numbers), but sometimes the season (and your more adventurous palate) calls for something a little more unusual: pickled nectarines.

Nectarines are fabulous on their own, of course, but pickling gives them an intense, tangy-sweet flavor. Placed atop a medley of mint and bitter greens, combine them with impossibly creamy burrata cheese, and these nectarines will make you look like a summer vegetable ninja.
