Chef Gabe Kennedy’s Family of Friends in Brooklyn
Released on 07/07/2016
Hey I'm Gabe Kennedy, we're here in Brooklyn, New York,
celebrating summer with a wonderful dinner party.
We're at Banyan Studios, one of my favorite
places on the planet.
Banyan Studios is a music recording studio
and it moonlights as a space for pop ups
and cooking events that I do.
And we are going to have an incredible meal
with some of my best friends.
Andrew, Chelsea Rose, Jesse, Matti,
Devon, Nicole, Erin, who's also helping me out, and myself.
The menu is summer bounty.
Lots of colors, lots of freshness,
lots of vibrant foods and flavors.
So we have some beautiful local heirloom tomatoes,
we're gonna slice those nice and thin.
We have a very diverse cheeseboard and a few cured meats
'cause everyone likes a little cheese and meat.
The highlight of the dinner
is these gorgeous little branzinos.
So we're gonna crisp them up in the pan,
roast them in the oven with some burnt citrus.
Delectable.
We also have a granita.
I took a little bit of unsweetened tea,
lemon juice, lime juice, sweetened it up
with just a touch of honey, laid it on a pan
and then every 30 minutes, in the freezer,
we go by with a fork and scrape it and it creates
these incredibly textured, ice shards.
We're gonna finish it with some fresh herbs
that we just snipped from the window box out there.
The granita will be a perfect refresher
after this wonderful communal meal.
It feels really nice to be able to sit down,
around the table, and dive into the abundance of summer.
It's not just what you eat but it's who you eat with
and the way that we eat, can dine communally,
and the way that we can share these experiences
with one another can be very powerful and very beautiful.
♫ Heard it was the best and only remedy
♫ The fact is that you seemed to be running pretty
♫ Quenching the thirst of a community
