As a chef my friends expect pairings
that are both original and unique.
So this party I'm pairing spicy stuffed mushrooms
with chilled whole milk.
Because of their rich and acidic balance,
these stuffed mushrooms are
the perfect pairing for whole milk.
The casein in milk binds with the capsaicin oils
in the chilies, neutralizing them so that you taste
more of the flavor of the chilies,
rather than just the spice,
