Ingredients

tablespoon vegetable oil

slices Canadian bacon, chopped

large sweet onion, chopped

1

large head of collard greens, leaves chopped, stems finely chopped

12-ounce can light beer, such as Pilsner or lager

tablespoons fresh lemon juice

tablespoon balsamic vinegar

tablespoon unsalted butter

Preparation

  1. Heat oil in a large wide pot over medium-high heat. Add Canadian bacon and onion and cook, stirring occasionally, until onion is soft, about 10 minutes. Add collards and cook, stirring occasionally, until slightly wilted, about 10 minutes. Add beer and 1/2 cup water and cook, uncovered, adding more water if collards are dry, until tender, about 30 minutes. Stir in lemon juice, vinegar, and butter and season to taste with salt and pepper.
