This month, our readers requested some really funky recipes from their favorite restaurants. That's not a bad thing! Often times, restaurants take something ordinary--like roasted eggplant--and elevate it into something extraordinary with the help of unusual ingredients (in eggplant's case, miso and bacon) or little-known techniques.

So we called in those recipes--whether they came from New York City or Phoenix or Hudson, Ohio--and all of them have surprising twists that make a difference when it comes to flavor.
