THE RECIPE: Crispy Kale Salad with Lime Dressing
Bon Appetit, September 2012
The Bitten Word: "Combined, these three components make for a perfectly good salad. The crispy kale is a nice contrast to the raw ingredients. And the dressing is a nice compliment to both. The three together? Maybe even a great salad."
On Anna's Plate: "This recipe was easy to throw together. It wasn't really challenging at all--maybe a little time-consuming with all of the veggie prep--but even that only took about thirty minutes, tops...Yummy!"
THE RECIPE: Eggplant, Mozzarella, and Saffron Rice Bake
Bon Appetit, September 2012
Fresh From Eva's Kitchen: "This casserole has a beautiful Paella taste...The texture of the rice was just perfect, not too soft, and the combination of the cheeses, the tomato sauce and the saffron flavored rice with the vegetables was just perfect."
Panini Girl: "I grew up eating my other's and grandmother's classic southern Italian eggplant parmigiano but was intrigued when I saw this recipe in the latest edition of Bon Appetit. The addition of a layer of arborio rice with a hint of saffron sounded interesting and I decided to give it a go."
THE RECIPE: Braised Chicken with Capers and Parsley
Bon Appetit, September 2012
Panini Girl: "I had found the dish for my capers. To be honest I've cooked a chicken dish very similar to this one using pickled cherry peppers, rather than capers. This version is just as good. I love the flavor that the vinegar imparts and the capers add just the right amount of punch."
What James Had For Dinner: "Braised chicken with capers and parsley is an easy recipe from this month's Bon Appetit magazine. The braise kept the chicken moist and ready when our guests were. The capers and the red wine vinegar (the recipe called for white but we have loads of red) added a much needed tang."
THE RECIPE: Devil's Food Cake with Hazelnut Crunch
Bon Appetit, September 2012
Lizz Potter: "I've been trying out new recipes each month which has been really fun. This month I made a Devil's Food Cake with Hazelnut Crunch from Bon Appetit. It was really good, although I would make some modifications if I decided to make it again."
Cooking for My Peace of Mind: "I didn't have a need for cake. So I decided to make cupcakes. Easier to share at work that way...so I wouldn't have to eat them all myself. Cuz as good as these are...I would eat them all. They are the fluffiest, lightest cupcakes I have ever eaten in my life. Hands down!"
