What the BA Staff Is Cooking to Get in the Mood for Fall
Here in the part of the country where there are four seasons, it’s about to be The Kinda Cold One. Currently it’s rainy. Family members are starting to ask about my Thanksgiving plans. Gah! The sunshine and beach days are OVER. And you know what? Awesome. Let’s stay inside and cook. Let’s nourish our bodies with warming stews, roasted things, and cheese. I polled the Bon Appétit staff to see what recipes everyone’s excited to make now that it’s blessedly under 80 degrees.

“You know what smell is my favorite?” associate editor Alex Delany asked me. No, I don’t, Delany, and honestly that kind of trivia is not really on my list of interests. But go ahead, tell me: “Rosemary frying in olive oil.” Okay, he has a point. This pasta recipe—which features such tantalizing smells—is his go-to for rainy nights. Make it!!

Lamb shanks, proclaimed “It’s Alive!” host and live man Brad Leone. He smoked some and ate them with garlic rice and sauerkraut this chilly weekend. “It was wonderful,” he told me. That’s all he told me. This recipe isn’t the one he made (Brad’s not really a recipe guy, FYI), but in the spirit of lamb shanks, it’s a BA fave.

Senior food editor Andy Baraghani is ready for sweet potato szn. He likes to pair them with something spicy-acidic to balance the sweetness. “They’re filling, healthy carbs–and it’s really hard for me to get carbs into my system,” he told me with a devilish grin. “I’m the only person who says this.” That’s right sir, you are.

On the other side of the potato spectrum we have Baked Potato Night in America, per editor in chief Adam Rapoport. The biggest russets you can find. Butter and sour cream BOTH. Chives, no scallions. Bacon bits, obviously. I won’t share you the details of the side salad he likes to go with. It’s just...unnecessary.

Production associate Kate Fenoglio knows what’s in season when the weather’s “brisk” and all of those other fiction workshop words: BUTTER AND BROWN SUGAR. She made Milk Bar’s Crack Pie for the first time this weekend, but it won’t be the last. It will, however, be the last of this list. So go preheat that oven. It’s been waiting all summer for you!
