Of the many, many recipes we publish, there are bound to be a few favorites that steal the spotlight. From seasonal showstoppers to comforting classics, these are the recipes our readers can’t get enough of. This month was all about braising. Take, for example, this sticky glazed pork belly. You start by making a lustrous caramel with plenty of soy, sake, and chiles to balance out the sweetness. This mustardy cider-braised pork (our gorgeous January cover star) is a speedier braising option when you only have an hour. The tender chops are first seared before simmering in a tart apple and shallot gravy.

But you can’t braise every night. You also loved miyeokguk, a light and briny Korean soup bolstered with cubed beef. This dish comes together in just 30 minutes, and is so nourishing, our deputy food editor ate it every day for over a year.
