Preparation
Place 1 cup (packed) Medjool dates (about 8 oz.), pitted, quartered, 1 tsp. finely grated orange zest, 1 cup fresh orange juice, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and 1 tsp. ground cinnamon in a small saucepan. Cover and cook over medium heat, stirring occasionally, until dates are softened and easily smashed with spoon, 8–10 minutes. Remove from heat; add 1 Tbsp. unsalted butter, cut into pieces, and smash dates with a potato masher until mostly smooth. Let cool before using.
Do ahead: Filling can be made 3 days ahead. Cover and chill.
