Ginger Doughnuts

Ingredients: 3 1/2 cups all purpose flour; 1 tablespoon ground ginger; 1 tablespoon baking powder; 1 teaspoon salt; 3/4 cup finely chopped crystallized ginger (about 4 ounces); 2 teaspoons grated lemon peel; 1 1/4 cups sugar; 3 large eggs; 1 tablespoon vanilla extract; 1/2 cup whipping cream; 2 tablespoons (1/4 stick) unsalted butter, melted, cooled; 1 1/2 cups sugar; 2 teaspoons ground ginger; 3 cups vegetable oil (for frying); 3 cups solid vegetable shortening (for frying)
