Let’s face it: Corn is the candy of the vegetable world. It’s super sweet but still feels nutritious. Bright as the August sun, each juicy kernel tastes like summer. And, this time of year, we recommend hardly cooking it. In this corn and chickpea bowl with miso-jalapeño tahini, the corn sizzles quickly with chickpeas and spices before getting topped with the goods: lettuce, tomato, avocado, and a just-spicy-enough tahini drizzle. When choosing the best corn, look for a tight, bright green husk with plenty of those silky tassels coming out, and squeeze the top to feel for those densely packed kernels.
