Ingredients: 1 tablespoon granulated sugar; 1 teaspoon kosher salt; 2 cups all-purpose flour, plus more for surface; ¾ cup (1½ sticks) unsalted butter, cut into pieces; 3 tablespoons Calvados or other brown liquor; 1 tablespoon apple cider vinegar; 3 tablespoons light brown sugar; ½ teaspoon ground cinnamon; ½ teaspoon ground ginger; ¼ teaspoon kosher salt; 2 medium sweet-tart apples, such as pink lady or Granny Smith, chilled, peeled, cored, halved; 2 tablespoons unsalted butter, melted; All-purpose flour (for dusting); 1 large egg, beaten to blend; Granulated sugar (for dusting); Vanilla ice cream or whipped cream (for serving)

If the apples aren’t cold when you wrap them, the dough won’t adhere, so make sure to put them in the fridge before you start on the dough for this apple dumplings recipe. For added texture and more fall flavors, stuff 1 Tbsp. cranberries, raisins, or pecans into the space where the apple cores used to be.
