Like many whole grains, Bhutanese red rice can be cooked in a bigger batch ahead of time. Reheat by steaming or microwaving in a covered dish with a spoonful or two of water.

Ingredients

cups Bhutanese red rice

Kosher salt

medium onion, halved

whole cloves

small dried chile de árbol, crushed

Preparation

  1. In a small saucepan, bring rice, a pinch of salt, and 2 cups water to a boil. Stick cloves into onion halves and add to pot along with chile. Cover, reduce heat to a simmer, and cook until rice is tender, 30–40 minutes. Let stand off heat, covered, 5 minutes. Fluff with a fork before serving.
