Name: Fried Sweet Cheese Ravioli with Honey
Yield: Makes about 24 Servings
Ingredients: 4 cups coarsley grated whole-milk mozzarella cheese; 1 15-ounce container whole-milk or part-skim ricotta cheese; 1 cup grated pecorino Sardo or pecorino Romano cheese; 4 teaspoons grated lemon peel; 4 cups bread flour; 1/2 teaspoon salt; 4 large eggs, beaten to blend; 1/4 cup (1/2 stick) unsalted butter, cut into 1/2-inch pieces, room temperature; 1/2 cup plus 2 tablespoons (about) room-temperature water; Corn oil or olive oil (for frying); Honey (preferably chestnut)
