Ingredients: 8 ounces membrillo (quince paste); 2 tablespoons sherry vinegar; 1 tablespoon Aleppo-style pepper; 1 teaspoon fresh lemon juice; 1 cup all-purpose flour, plus more for hands; 8 ounces chilled fresh goat cheese; 1½ cups panko (Japanese breadcrumbs); 2 large eggs; Vegetable oil (for frying; about 6 cups); Kosher salt; A deep-fry thermometer; Membrillo can be found at specialty foods stores, some supermarkets, and online.
