Ingredients: 1 cup cup plus 2 tablespoons semolina flour, plus more for dusting; 1 cup all-purpose flour, plus more for dusting; 3 large eggs; 2 cups (packed) purple or green basil leaves or parsley leaves with tender stems; Kosher salt; 2 pounds plum tomatoes, quartered; 2 large red sweet peppers (such as Hungarian) or 1 large red bell pepper, halved lengthwise, seeded; 3 garlic cloves, finely grated, divided; ½ cup olive oil, divided; Kosher salt, freshly ground pepper; 2 cups mixed cherry tomatoes, halved; Purple or green basil leaves or parsley leaves with tender stems, torn (for serving); Finely grated Parmesan (for serving)
