1/2 pounds Yukon Gold potatoes, cut into ½" pieces

Kosher salt, freshly ground black pepper

tablespoons olive oil

1

tablespoon whole grain mustard

Preparation

  1. Step 1

    Place potatoes and 1 Tbsp. salt in a medium saucepan and cover with 2" cold water. Bring to a boil, reduce heat to low, and cook until potatoes are tender, 8–10 minutes. Drain, shaking off excess water.

    Step 2

    Heat oil in a large skillet over medium-high heat. Add potatoes and cook, turning occasionally, until golden brown. Remove from heat and add mustard; season with salt and pepper and toss to combine. Reserve ½ cup potatoes for Frisee, Potato, and Apple Salad.
