For best flavor, head to the farmers' market for peak-season fruit. Freeze in a single layer on a parchment-lined rimmed baking sheet until solid.

cups sliced peeled peaches, frozen

tablespoons finely grated peeled ginger

oz. bourbon

oz. simple syrup

oz. fresh lemon juice

Sage sprigs (for serving; optional)

Preparation

  1. Purée peaches, ginger, bourbon, simple syrup, lemon juice, and 2 cups ice in a blender until smooth and very thick (mixture will loosen immediately once poured). Divide among glasses and garnish with sage sprigs, if desired.
