Poached Salmon with Green Goddess Dressing

cups bottled clam juice

cups dry white wine

6- to 7-ounce salmon fillets

/2 cup mayonnaise

/3 cup coarsely chopped fresh chives

/2 cup sour cream

garlic clove, peeled

tablespoon tarragon white wine vinegar

teaspoon chopped fresh tarragon

teaspoon sugar

teaspoon Worcestershire sauce

Preparation

  1. Step 1

    Combine first 5 ingredients in large skillet; simmer over medium heat 5 minutes. Reduce heat to medium-low. Add salmon fillets, cover and simmer until just opaque in center, about 7 minutes. Transfer salmon to platter. Cover and chill until cold. DO AHEAD Can be made 1 day ahead; keep chilled.

    Step 2

    Blend mayonnaise and all remaining ingredients in blender until smooth. Season dressing to taste with salt and pepper. DO AHEAD Can be made 1 day ahead. Cover and chill.

    Step 3

    Transfer salmon to plates. Spoon dressing alongside.
