Ingredients: 2 pounds small waxy red-skinned potatoes; Kosher salt; ¾ cup plus 2 tablespoons vegetable oil, divided; 1 medium onion, finely chopped; ¾ pound fresh Mexican chorizo or hot Italian sausage, casings removed; 1 large egg yolk; 1 garlic clove, finely grated; 2 teaspoons fresh lemon juice; 3 scallions, thinly sliced, divided; Ancho chile powder (optional) and hot sauce (for serving)
