Ingredients: 1/2 cup (or more) water, divided; 2 teaspoons cornstarch; 1 tablespoon unsalted butter; 2 cups halved pitted fresh Bing cherries or other dark sweet cherries (about 14 ounces unpitted cherries); 2 tablespoons (packed) golden brown sugar; 1 tablespoon fresh lemon juice; 3/4 cup unbleached all purpose flour; 2 tablespoons sugar; 1/2 teaspoon baking powder; 1/4 teaspoon salt; 1 1/3 cups whole-milk ricotta cheese; 4 large egg yolks; 1/2 cup whole milk; 3 large egg whites; Vegetable oil (for brushing); Plain Greek-style yogurt or plain regular yogurt (optional)
