Nothing brightens up a dish like a showering of freshly chopped scallion. While the white part of the stalk can hold up in a mirepoix, the green can be finely sliced and sprinkled on top of a dish as a garnish. But their flavor complements everything from stir-frys to roasted potatoes, and can even be seared whole or shaved into a salad. HOW TO BUY
Look for crisp, bright-green stalks and a firm white base. Avoid stalks with any slimy, wet tops.

HOW TO STORE
Store unwashed green onions and scallions in a plastic bag in the fridge for up to 5 days.
