With the first bite I realized what a marvelous dish this is. The beets and onions provide an earthy sweetness which is nicely balanced by the bitter tang of the greens.

I hate to say it, but I expected this dish to be bland. But Bon Appetit surprised me! It tasted great. However, I'd recommend a little shake of salt and pepper.

You can use red beets if golden beets are unavailable for this farfalle recipe, but your pasta will turn pink.
