Think of this as a citrusy take on blue cheese dressing. The funky flavor of finely chopped preserved lemon steps in for the cheese, bringing its own salty complexity to a dressing that’s an ideal match for crisp iceberg wedges, colorful crudités, or spicy Buffalo wings. Start with 2 tsp. of the salty brine to thin the dressing and taste before adding more. You can follow our preserved lemon recipe to make your own at home, but store-bought will work just as well.
