large parsnips (8 to 9 ounces), scrubbed, sliced on slight diagonal into 1/8-inch-thick rounds, divided

tablespoons chopped fresh Italian parsley

tablespoons thinly sliced green onion tops

Preparation
Heat 1 1/2 tablespoons oil in large skillet over medium-high heat. Arrange half of parsnip slices in single layer in skillet. Sprinkle with salt and pepper. Cook until bottoms are golden, 3 to 4 minutes. Turn parsnips over; sprinkle with salt and pepper. Cook until tender and slightly crisp, 2 to 3 minutes longer. Transfer to plate; mound in center. Repeat with oil and parsnip slices. Top with parsley, green onions, and sour cream.
