Preparation
Step 1
Preheat oven to 350°. Using a serrated knife, cut stems off the artichokes, forming a flat base. Lay artichokes on their sides and cut 1" from tops. Using your fingers, pry open the leaves from the top to expose the choke. Using a spoon, scrape choke from each artichoke and discard. Transfer artichokes to an 8" square baking pan. Mix breadcrumbs, herbs (if using), garlic, and salt in a small bowl. Stuff breadcrumb mixture between leaves. Drizzle oil over artichokes and pour 1 cup water into pan.
Step 2
Roast artichokes, uncovered, in the oven until just tender when heart is pierced with knife, about 50 minutes.
