Ingredients

/2 cup black olives (such as Niçoise or Nyon), pitted and coarsely chopped

tablespoon capers, rinsed, drained, coarsely chopped

salt-packed anchovies, soaked, boned, chopped
1
garlic clove, split, germ removed, finely chopped or pounded to a pur&eaccute;e
1
sprig savory, leaves removed and chopped
1
/2 teaspoon brandy (optional)

/4 cup olive oil
Kosher salt (optional)

Preparation
Step 1
Combine first 7 ingredients in a medium bowl. Add salt to taste if desired. Let sit at room temperature for 30 minutes before serving to allow the flavors to marry.
Variations
Step 2
Stir in 2 Tbsp. chopped roasted almonds.
Step 3
Add 1/4 tsp. finely grated orange zest.
Step 4
Substitute green olives for black, or mix green and black.
