oz. country ham or good deli ham, coarsely chopped

oz. cream cheese, room temperature

cup mayonnaise

tablespoon hot sauce

teaspoons whole grain mustard

teaspoon cayenne pepper (optional)

scallion, chopped

tablespoons finely chopped fresh flat-leaf parsley

Kosher salt and freshly ground black pepper

Preparation

  1. Pulse ham in a food processor until finely chopped. Transfer to a large bowl and mix in cream cheese, mayonnaise, hot sauce, mustard, and cayenne, if using. Fold in scallion and parsley; season with salt and pepper.
