/2 garlic clove

cups shelled fresh peas (from about 2 pounds pods)

/4 cup finely grated Pecorino, preferably aged

/4 cup fresh mint leaves

/4 cup extra-virgin olive oil

tablespoons fresh lemon juice
Kosher salt
Toasted bread and assorted cruditès (such as fennel wedges, carrots, asparagus, radishes, and cooked baby potatoes)

Preparation
Step 1
Pulse garlic, peas, Pecorino, and mint in a food processor until finely chopped. Add oil and lemon juice and process until a coarse purée forms. Season with salt.
Step 2
Serve pea mash with bread and cruditès.
Step 3
DO AHEAD: Pea mash can be made 6 hours ahead. Cover and chill.
